These are for a co-worker of mine; her last day of follow up chemotherapy for breast cancer was today, so we’re celebrating with the cupcakes of her choice tomorrow.

I handed her Vegan Cupcakes Take Over the World and told her I’d make anything she wanted – she picked Pineapple Right Side Up Cupcakes. I made the Green Tea ones (sans marzipan sakura) as well because I hate pineapple and needed an excuse to make them.

Yummeh.

My mom found this blog when searching for vegan chocolate chip cookie recipes, and figured out that this blog was mine. (And is disturbed by my Inkernet Potty Mouth(tm), whoops.)
I think it’s awesome that she’s looking into recipes, because it means that she might look into vegan baking.

Vegan cupcakes really are taking over the world.
