Sexy Low-Fat Vanilla Cupcakes with Not Too Sweet Blueberry Mousse

I’m going to start linking new images from my Flickr stream because I’m lazy. (Big surprise there.)

These were emergency cupcakes for Jake’s friend at work, as it was her birthday and being a new vegan with a pretty clueless family, she’s pretty much living on French fries. She was super excited about these, I’m glad I could make a difference.

I need to start reading directions in advance, and pay attention to things like IT TAKES THIS LONG TO MAKE THIS RECIPE and USE A FOOD PROCESSOR NOT YOUR CRAPPY BLENDER, STUPID. Maybe I piped it weird, but the mousse recipe wasn’t enough for all of the cupcakes; I also used my new Wilton bag and tip, which makes life a lot easier. I’m sure I’ll have a better time when I use it with a buttercream because the mousse isn’t terribly fond of the process.
My two bits of advice for this combination: spray your cupcake liners, lest your cuppies will stick and serve these bitches immediately because the mousse isn’t sticking around for the next millenium.

And? They’re delicious. :3
